1 kg Chicken
SET - B ------- ( Brine Mixture ) Optional
1/2 cup Water to Boil
5 TBSP Salt
5 TBSP Sugar
2 TBSP Peppercorn
8 Cloves Garlic smashed
2 pieces Bay Leaf
2 pieces Onion ( Medium )
2 pieces Lemon Whole Lemon Sliced
2 litre Cold Water
SET - C ------- ( Marination Mixture )
1 tsp Salt
1 tsp Black Pepper
2 tsp Coriander Powder
6 pcs Garlic
3 pcs Onion
2 tsp Cumin Powder
1 TBSP Paprika
3 pieces Red Chili (Can use Peri peri / Ghost Chili ) 3 Fresh Red Chili = 1 tsp chili powder
1 pieces Capsicum ( Yellow / Red ) Without Seed
2 tsp Thyme ( Dried )
4 TBSP Olive Oil
2 TBSP Lemon Juice
1 tsp Lemon Zest ( Optional )
1 tsp Rosemary Powder ( Optional )
3 pieces Bay Leaf ( Hand Crashed )
SET - D ------- ( Garnishing )
Potato / Sweet Potato
Carrot
Lemon

Marination

- Mix SET - C for marination mixture
- Prick the chicken with fork
- Marinate the chicken for 3-24 hours in the refrigerator

Brine Mixture ( Optional )

SET B - Brine for 12 - 24 hours

Grill /Bake

- Grill chicken 3 to 4 min each side in a grilling pan
- Bake in the oven for 45 min @ 165C
