SET - A ------- ( Crust )
1 cup Graham Biscuit
6 TBSP Butter melted
SET - B ------- ( Filling )
1 cup Cream Cheese Room temperature
2/3 cup Sour Cream
3 pieces Eggs
2 TBSP Lemon Juice
1 tsp Lemon Zest
1 tsp Vanilla extract
1 cup Sugar
STEP - C ------- ( Lemon Curd Topping )
1/4 cup Lemon Juice
1/2 cup Water
1/2 cup Sugar
2 TBSP Cornstarch
2 pieces Egg Yolk beaten
Pinch of Salt
1 tsp Lemon Zest
2 TBSP Butter

These Lemon Cheesecakes have three layers. Each individual cheesecake starts with a Graham Cracker Crust. Next, is a creamy smooth and dense cheesecake filling. The topping is a deliciously tangy sweet lemon curd. I especially like how the tanginess of the lemon curd offsets the richness of the cheesecake filling.

    Making Crust

    - Crush cookies into fine crumbs.
    - Add melted butter
    - Press in baking pan
    - Bake 7-10 min at 160C
    - Set aside

    Filling Preparation

    - Beat SET - B
    - Pour over the crust
    - Bake for 35-40 min
    - Let it cool in room temperature for 1 hour
    - Refrigerate for 4 hour

    Making Toppings

    - Mix SET - C in a pan
    - Bring to boil until thicken
    - Let it cool
    - Pour SET - C over cheesecake
    - Refrigerate for 1 hour
