Steps

1
Done

In a large mixing bowl, combine the marinade ingredients, soy sauce, sugar, pepper. Add the steaks and set aside to marinate two hours.

2
Done

For the dressing, in a separate mixing bowl, add the fish sauce, lime juice, sugar and half finely chopped chili. Whisk together until sugar has dissolved.

3
Done

In a large mixing bowl, add the thinly sliced shallot and the cut cherry tomatoes. Slice cucumber in half, remove seeds and cut into pieces. Add finely chopped chillies, shredded mint leaves, chopped spring onion, Thai basil and coriander leaves. Add the dressing and mix well.

4
Done

For the steaks, add oil to a frying pan or ideally use a griddle pan over high heat. Once oil is hot, sear the steaks for 3 to 4 minutes on each side cooked medium rare. Remove the steaks from the heat and leave to rest for 10 minutes covered with foil and kitchen towel.

5

Slice the steaks finely, place over the top and drizzle the rest of the dressing.
Can be served as is or with plain rice on the side.
