1 Done	Egg Mixture - - Mix and beat SET - A
2 Done	Preparing Chicken - - Cut chicken into butterfly - - Flatten the thicker side using meat mallet - - Coat with flour both sides - - Dip in Egg mixture, both sides
3 Done	Cooking - - Add to pan with butter and olive oil - - Cook each side for 4 min - - Set aside - - Deglaze pan with SET - C - - Leave to reduce 2 min on high heat - - Return chicken to the sauce on low heat not more that 30 seconds
