Ingredients

1.5 kg Fish
SET - B ------- ( Paste )
1 inch Galangal Finely Chopped
1 Stick Lemon Grass Finely Chopped
5 pcs Lime Leaf Finely Chopped ( Remove Stem )
1 Flower Torch Ginger ( Pink Flower )
5 pcs Onion ( Asian red Small Shallot )
1/2 inch Turmeric ( Fresh: if available ) Alternately can use 1/2 tsp of turmeric powder
4 Cloves Garlic
5 pcs Dried Red Chili Soak in the water 15 min
5 pcs Fresh Big Red Chili (Including seed )
2 TBSP Tamarind paste / lime juice
1/2 tsp Brown Sugar / Palm Sugar
1 TBSP Salt
2/3 cup Oil Do Not Use Water
1 tsp Belacan / Dry Shrimp ( Optional ) For All Fish / Prawn
SET - C ( Add on in Wrap )
1 Stick Lemon Grass Insert in fish stomach
5 pcs Lime Leaf Insert in fish stomach
Banana leaf
Turmeric Leaf ( For Extra Fragrance )
Dressings
Calamansi Lemon

This Sambal Fish (Stingray) is a popular fish dish that we usually have for dinner at hawker centres of coffee shops. Now you can enjoy this at the comfort of your own home without making a mess. You can also prepare this in advance for your BBQ parties. We're very sure that your guests will love this. Remember to squeeze some calamansi juice over the fish for the extra punch.

Seasoning

- Season the fish with few pinch of salt

Making Paste

- Blend all the ingredients from SET B and make paste
- Do not use water

Marination

- Marinate the fish for 30 min with Paste SET - B

For Grilling in Charcoal / Tawa

- Banana leaf ( add / brush some thin layer of oiI )
- Put some slice of turmeric leaf ( optional for extra fragrance )
- Wrap the fish with banana leaf
- Can replace the banana leaf if it burns in halfway
- Grill in on TAWA / non-stick pan in medium heat
